POTATO LEEK SOUP                                          makes 3 quarts

2-3 lbs. white potatoes
1 bunch leeks
2 quarts chicken broth (the better the broth, the better the
soup)
½ quart Half and Half
Salt and pepper to taste

1.        Peel and cut the potatoes into small pieces. Put in
         soup pot.
2.        Cut the leeks so that there are still some green
        leaves. Remove the root end, slice and clean. Slice
        into 1 inch pieces. Add to soup pot.
3.        Add broth.
4.        Cook until the potatoes and leeks are done.
5.        Blend the mixture to desired consistency.
6.        Add Half and Half. Heat gently until warm enough.
7.        Add salt and pepper to taste.
8.        Good the second day.
9.        Variation – add small pieces of ham.
